Easy Baked Kale Chips

I have a fond memory of when hubby and I climbed Cascade Mountain with a giant bag of kale chips as our only snack. It was our last mountain hike together before we had babies. When we got to the top, I remember seeing myself in a reflection with green kale pieces stuck in my teeth! These baked kale chips might be a bit messy to eat but they are so YUMMY!

Kale is amazing for you! It has vitamin k, vitamin c, iron, chlorophyll, antioxidants and calcium. It’s also very fibrous and aids in digestion.

Baked kale chips are so delicious and easy to make! They will quickly become a favorite healthy snack in your home.

Easy Baked Kale Chips

These kale chips are crunchy, savory and delicious. A healthy alternative snack to potato chips.

Ingredients

  • 1 head Kale
  • Olive Oil
  • pinch Salt

Instructions

  • Break up the kale into a large bowl. Try not to get the thick stems.
  • Drizzle with olive oil. Just enough oil to coat each piece.
  • Salt to taste.
  • Lay the kale out on a half sheet pan. Give the kale enough room to bake properly. Generally, 1/2 head of kale per pan.
  • Bake at 250 degrees for about 40 minutes or until crispy.
